《云林堂饮食制度集》是1984年中国商业出版社出版的图书,作者是元倪瓒撰/邱庞同编。倪瓒,元末隐居于太湖,家有云林堂,著菜谱《云林堂饮食制度集》。反映元代无锡地方饮食风格的烹饪专著。书中汇集饮食五十多种,都以菜品命题,逐条而记,除记述原料、配料外,都说明烹饪方法。书中有不少菜肴,如:烧鹅、蜜酿蝤蛑、煮麸干、雪菜、青虾卷等比较精致。书中菜肴有些被后世烹饪书籍复录,特别是“烧鹅”一品,清代袁枚在《随园食单》中加以录,并改用倪瓒之号题名为“云林鹤”。日本羽仓则《养小录》也将烧鹅收入,可见此菜独具风味,名驰中外。“蜜酿蝤蛑”也很有特色,如今的苏式名菜“芙蓉蟹斗”(一名“雪花蟹斗”)正是在其基础上发展起来的。书中菜肴以鱼、虾、蟹、螺及湖泊水蔬为多,正是著者家居水乡的饮食特色的反映。
Yunlin Tang Diet System Collection was published by China Commercial Publishing House in 1984 by Yuan Ni Zan/Qiu Pang. Ni Zan, who lived in seclusion in Taihu Lake at the end of the Yuan Dynasty, owned Yunlin Hall and wrote the recipe “Collection of Yunlin Hall Catering System”. A cooking monograph reflecting the local cuisine style of Wuxi in the Yuan Dynasty. There are more than 50 kinds of food in the book, all of which are based on the proposition of dishes and are recorded one by one. In addition to the raw materials and ingredients, all of them describe the cooking methods. There are many dishes in the book, such as roast goose, honey fermented marine products, boiled bran, pickled vegetables, green shrimp rolls, etc. Some of the dishes in the book were reproduced by later cooking books, especially the “roast goose”, which was recorded by Yuan Mei in the “Suiyuan Food List” in the Qing Dynasty, and was renamed “Yunlin Crane” by Ni Zan. Japanese Yucang will also bring in roast geese in the “Raising Records”, which shows that this dish is unique and famous at home and abroad. “Honey brewed products” are also very distinctive, and today’s famous Soviet dish “hibiscus crab fight” (a “snowflake crab fight”) is developed on its basis. The dishes in the book are mainly fish, shrimp, crab, snail and lake water and vegetables, which is the reflection of the author’s dietary characteristics in the water town.
