《素食说略》是1984年由中国商业出版社出版的图书,作者是薛宝辰。《素食说略》为清薛宝辰(陕西长安人)所著,除自序、例言外,按类别分为四卷,除记述了清朝末年比较流行的一百七十余款素食的制作方法之外,书中充分论述素食的益处:“蔬菜富有风味,清爽适口,又营养身体,无肉食腥羶之气,也不会残杀生灵,使人们欣赏到生机的乐趣,从而也遵循了「生机贵养,杀戎宜除」的佛家观点。”从素食主义的角度来看,薛宝辰在书中所提,素食本来就富有风味,既提供了清爽适口的食品,又可以保养身体。让禽鱼任意的飞翔和遨游,则可使人们欣赏到生机的乐趣。素食不但可以增口福,又可以增加人们的清福,让素席胜似盛筵,说是素食主义的最根本意义所在。《素食说略》也使大家至今仍能了解清末素食的发展状况,以启发当今事厨者,亦大有补益。
